For Iliana Marquez, success didn’t begin with a grand opening — it began with a pivot.

In 2019, Marquez and her husband launched their first venture as a food truck, initially serving crepes, croissants, and coffee. But it didn’t take long for the community to shape their path in an unexpected way.

“We were selling crepes and coffee, but people kept asking us for tacos and Mexican food,” Marquez recalls. “That’s when we realized we needed to shift and lean into what we truly knew.”

That shift led to the creation of Los Marquez Tacos — a concept rooted in authenticity, flavor, and resilience. As they introduced tacos, tortas, and their now-famous birria, customers responded immediately. Then came an unforeseen turning point: COVID-19.

While many businesses struggled, the Marquezes found purpose in staying open. “People were home, kids were home, and we had someone come up and say, ‘Why don’t you feed the kids?’” Marquez says. “That moment turned into a chain of giving. The community started donating so we could provide free meals.”

That spirit of service became foundational — not just to their business model, but to their identity.

As demand grew, so did the need for space. Within a year, they added a second food truck for events and eventually transitioned into a brick-and-mortar location for Los Marquez Tacos. “The food truck just couldn’t keep up,” she says. “We knew it was time to grow.” 

Today, the restaurant continues to thrive, with its birria tacos leading the menu. “We worked on that recipe for a month,” Marquez says. “I had doubts at first because people weren’t familiar with it, but once we introduced it, it became our biggest hit.” 

Not long after establishing Los Marquez, the couple revisited an earlier dream — one they had set aside when their food truck pivoted. That dream became Belle Vie Bistro.

“Belle Vie means ‘beautiful life,’ and it was something we always wanted to bring back,” Marquez explains. Located in downtown Rockwall, the bistro offers a different experience, blending European-inspired cuisine with handcrafted pastries. Everything — from croissants to ciabatta bread — is made from scratch.

With a full menu spanning breakfast, lunch, and dinner, Belle Vie offers signature dishes like lobster ravioli and chicken pesto pasta.

But beyond the menus and milestones, Marquez’s story is deeply personal.

“For me, it goes back to my childhood,” she shares. “I remember my mom having just a wheel of cheese and five kids to feed. That feeling of not having enough — it stays with you.”

Today, feeding hundreds of people each week carries a deeper meaning. “It heals that little girl that once was hungry,” Marquez says. “It’s our way of taking care of others.”

Through resilience, reinvention, and a heart for service, Iliana Marquez has built more than two successful restaurants — she’s created spaces where food, family, and purpose come together.
