Roasted Garlic Chicken with Oregano, Lemon, and White Wine - - Archived

8 chicken thighs

2 onions, quartered

lemon, sliced

6 garlic cloves, peeled

4 Tbsp olive oil

1/2  cup dry white wine

1 1/2 cups chicken stock

oregano sprigs

salt and pepper, to taste

»  Preheat the oven to 350 ºF. While it’s preheating, prepare your onion, garlic, and lemon.

»  Place the chicken thighs, onion, lemon slices, garlic, oregano, and olive oil in a large bowl, salt and pepper to taste, toss to combine, then transfer to a baking dish or cast-iron pan.

»  Pour the wine and stock into the baking dish and roast for 1-2 hours, or until the chicken is golden and cooked through. Serve.
