For Tim Clowers, food has always been about more than what is on the plate. It has always been about bringing people together, creating opportunities to make memories, and making every day feel special around the table.

Growing up, some of Tim’s favorite memories were made in the kitchen and around the family table. His appreciation for food was shaped by the love for a good meal that was passed down by his grandmother and mother. He fondly remembers the smells of Sunday dinners and holiday traditions around food that brought everyone together.

Tim spent more than 20 years working in commercial kitchens, beginning in restaurants before transitioning into the catering industry. Alongside his wife, he helped build The Family Table, a catering business rooted in the belief that life happens around the table.

After a decade with The Family Table, Tim began sharing his passion for outdoor cooking and family meals on social media. From that passion, Cook It With Tim was born. The platform provides home cooks with dependable, flavorful recipes designed for real life. His philosophy is simple. Great-tasting food does not have to be complicated. More importantly, gathering the people who matter most around a table is always worth the effort.

Tim spends countless hours behind the grill developing and testing recipes, exploring new techniques, and discovering flavors to share with his followers. Pork steaks are proof of that. They are affordable, easy to find, and packed with flavor. Designed with real families in mind, this recipe has become a favorite for gatherings of all sizes. PORK STEAKS

Pork steaks are a tender, flavorful cut of meat usually from the pork shoulder roast (often called the Boston butt). This is the same cut of meat used to make pulled pork, so you know it is packed with rich flavor.

Equipment:

Pellet grill

Ingredients:

4 Pork steaks about 1” thick | ¹/4 cup yellow mustard | ¹/4 cup Worcestershire sauce | 4 Tbsp. butter | ¹/4 cup BBQ rub

Instructions:

Prepare the meat: Pat your pork steaks dry if needed, then smear a generous portion of yellow mustard over the meat as a binder to grab the seasoning. Then season well with the BBQ rub on both sides.

Smoking the Steaks: Preheat the smoker to 250° and cook the steaks directly on the upper grate for one hour (or indirect heat). Flip at the 30-minute mark. Cook at this temperature 1 hour (or until the pork steaks reach 140°).

Basting Sauce: At the end of the hour, whisk together melted butter, apple juice, and Worcestershire in a small bowl.

Raise Smoker Temperature: Once the steaks have reached 140°, increase the temperature of the smoker to 300° and generously baste your steaks with the basting sauce and flip them. Repeat every 15 minutes until the steak temperature reaches 165° (about 30 minutes), then place the pork steaks on direct heat (closer to the heat source).

Finish Cooking: Continue cooking until the pork steaks reach at least 185°.

Notes:

Keep a watch on temperature – like cooking all meats, you do not want them to overcook, so they do not dry out.

Prep the meat ahead of time if needed – You can season and place them back in the fridge for several hours before cooking.

Optimal Tenderness – You will want the pork steaks to reach at least 185° (this is how I like them), but if you let them continue to cook until 200°, they will be even more tender.

Can’t find pork steaks at your grocery store – No problem, you can ask your butcher, and they will cut them for you.

If you do not have a smoker these can be prepared on a grill. For grilling, you need to use thin chops on an indirect heat for about 45 min until the internal temperature reaches 140°. Then sear the steak on a direct flame for 3-4 minutes per side with a final desired temperature of 160°.
